Have you ever watched a movie or show where there is a small group of soldiers in a situations where they use those hand signals to communicate? Is there a standard to these signals or are they unique to each unit or possibly branch of the military?

There is a standard set of hand signals in FMs on infantry small unit or tactics, patrolling and so forth. Most basic commands are standardized in them. In addition units may develop additional signals as needed though these are often limited to the unit, platoon orsquad.
