When you fry cat fish do you season the fish them bread it? Or do you season the corn meal?
If anybody else has some good ideas please let me know. :) :) :)

Season the corn meal, and bake (or fry).

Depends on the recipe. Some call for seasoning the fish before, some call for marinating the fish in the fridge, and some call for adding the seasoning to the cornmeal. Could you be more specific? Are you talking about salt & pepper catfish or just an old fashioned fish fry?

Either i have been useing premix and i wanted to try something different.

Combine salt, pepper, and cornmeal. A little dry mustard also adds a bit of "oomph". Dont forget to "rub" lemon juice on the fish. Catfish is a strong fish and needs the lemon.

When we bake haddock at work we season both the bread crumbs and the fish.

Try a picnic ham glazed with Molasses, Mustard, and Pineapple juice. Use the pineapple ring to decorate the ham. Bake 350 until golden brown about 1 hour. Serve with potato salad, coleslaw, green beans, hot biscuits, and some sweet ice tea. Make a Nanner Puddin' for dessert. ;)
