I still think instead of Enterprise, they should of did a series with Sulu and the Excelsior, say five years after STVI.........

how?  There's *nothing* canon in the time between the launch of the Enterprise-B and "Encounter at Farpoint" except the Narendra III think where 3 Rommies smoked the Enterprise-C, and that still leaves 40 years of the timeline to play with.
