Title: What goes best with a gas stove

Need to get a new skillet but I got a gas stove what works best with it?, cast iron or flat iron or just get another cheep non stick skillet. Also what about camping type cooking stuff how long do thoes things last if you use them at home.  Just wondering.

O.K. Tim..my sage advice (for what it's worth)..

Cast iron is very good, as long as you keep it seasoned, i.e. clean, but oiled.  Various ways to do it, and I clean mine by heating them on medium flame, and rubbing the inside with Kosher salt, then adding some cooking oil as it cools down..just enough to cover the bottom, then take a paper towel and coat the sides..

I also like Revere Were (sp?) and Oneida, but I'm originally from Upstate NY, and could go to the factory stores there

I don't like non-stick, but that's me

For chili, I use a four or eight quart canning pot, depending on how many of my kids and grandkids are coming over.

nonstick doesn't like the quick high heat you get with a gas stove.  I would stick with heavy cookware, cast iron is good, or some of the multi-layer cookware that is out.

I use Calphalon ( http://calphalon.com/calphalon/consumer/jhtml/productSearch.jhtml ). Electric or gas the heat distribution is even. Been using Calphalon for a few years now and everything is as good as the day I bought the set.

Most professionals seem to prefer 18/10 stainless steel.  It heats very evenly, is safe up to 600 degrees, and can be put into an oven as well as used on the cooktop.  It also gives a somewhat non-stick surface, if properly oiled.    I personally do not like cast iron because of oxidation seeping into the food, and Teflon always flakes eventually, and is supposed to be very bad for you if ingested.

Some people will tell you that stainless is very sticky (use the PAM), and they prefer carbon steel cookware.  I've not tried French carbon steel, but it looks interesting.  I guess ut's really about what you like to use.
